After configured the Outbound mailbox to connect to Outlook.Office365.com for SMTP mail server and validated the Email Server User and Email Server Password are valid and connection can be established to the mail server. Email is being sent as ROOT because of missing configuration.

To resolve this, go to the "Advanced Configuration" tab on the AR System Email Mailbox Configuration Form for the outbound SMTP mailbox and specify a value for Email Address and Reply To Address.
